Stubborn and constant research to unearth rare meats, cured meats and cheeses, age-old vegetables, to reinterpret them and give them a starring role, pairing them with secret flavors and ingredients. Our chef's recipes put the spotlight on local delicacies: caciocavallo podolico, soppressata irpina, porcini mushrooms, black truffles, Carmasciano and hazelnuts from Avellino.

- Fagottini di genovese with chianina meat reduction on taleggio cheese fluff and parmesan chips
- Risotto with porcini mushrooms, Carmasciano fondue and black truffle
- Chestnut tagliolini with Normandy butter and black truffle
- Potato gnocchetti with pumpkin, leek and hazelnut crumble

- Seared Wagyu with pumpkin fluff and vegetable garden
- Stracotto al Taurasi on milk potato mousse and crispy vegetables
- Suckling pig with hazelnut sauce, potato millefeuille and vegetable chips
